You’ll Need:

Fresh spinach – approximately two hands full
1 packet of Feta Cheese
1/2 cup Greek Vinaigrette Dressing
Filo Pastry (I use pre-made and pre-rolled)
4 skinless salmon fillets
1/2 cup Sour Cream
1/4 chopped cucumber
1 Tbsp. chopped fresh dill

Cook It!

Heat oven to 200ºC or 170ºC fan
Combine first 3 ingredients
Cut filo pastry into 4 sheets and spray with cooking spray or a brush of oil
Place 1 fish fillet along one short side of one pastry sheet and top with 1/4 of the spinach mixture.
Fold over long sides of sheet, then roll up, starting at fish-topped side. Repeat with remaining sheets, fish and spinach mixture
Place seam sides down on an oven tray covered with a baking sheet; spray with cooking spray or a brush of oil. Cut 3 diagonal slits in top of each wrap
Bake 10 to 12 min. or until crusts are golden brown and fish flakes easily with fork
Meanwhile, mix sour cream, cucumber and dill until blended to serve
