Serves: Me! Just me, no one else; me, me, me, me, me……..

You’ll need A handful of each of the following ingredients:

Lambs lettuce
Cherry tomatoes (halved)
Salted, roasted cashew nuts

Plus:

A couple of slices of prosciutto ham (however many you can be bothered to peel off the annoying dividing paper that they choose to restrict my diet by implementing!)
1/3 to ½ of a block of halloumi cheese, diced – depending on how hungry you are
Extra virgin olive oil
Pepper
Lemon/Lime juice (I use the stuff out of a bottle because I cannot be bothered!)
½ an avocado

Method:

Warm up a small frying pan and throw a splodge of oil in. Wait until the oil is bubbling and throw in the halloumi blocks (watch out for the flying oil!)

While that starts to brown, throw the lambs lettuce leaves, avocado and tomatoes into a bowl (the one you plan on eating from!)

Have a fight with the prosciutto and throw that into your eating dish. By this point the pan should be making that satisfying frying noise! Mmmmmmm…..

Give the pan a wiggle and toss the halloumi around so it gets a nice all-over tan!

Here comes the only tricky bit, if you discount the prosciutto paper of course!

Grab the pan and use a fork to flick out the halloumi (yes that is a professional cooking term and I’m sticking to it!) into your salad bowl. The idea behind this, as there is method in my madness, is to keep as much oil in the pan as you can!

On completion of the tricky bit, pop some lemon juice into the pan with the remaining oil (stand back it will splash and it hurts – I can tell you from experience!) Throw in some pepper and whisk together. Drizzle it over the salad and throw on the cashews for good measure….Nom, nom, nom, nom!
